The EVOLUTION brewhouse can be configured with 3- 4 tanks, from 12 – 16 – 20 – 25 hectoliters (for single / double batch or batch continuously), it is the ideal solution for professionals in the sector, it can be designed according to customer production needs.

Made of stainless steel AISI 304, with high quality materials, it has been designed for the production of any type of beer.

The EVOLUTION brewhouse has a dedicated software, simple and intuitive to use, with integrated remote assistance control, to guarantee maximum energy savings and reduced maintenance.

The processes transfer of the must from the bottom, limit the possibilities of oxidation, combined with the filtration in an independent tank and the tanks dedicated to each individual process, ensure that this brewhouse guarantees high efficiency, yield and production capacity.

Description

The brewhouse has a production capacity per batch between 12-16-20-25 hl of finished must at 15 ° P with an average yield of 85%, it has a very low degree of oxidation of hot must and requires a reduced use of chemical products for sanitization.

It is very compact, simple to manage and with a high degree of reliability.

The system includes a steam supply.

Tanks made with certified steel, using oversized sheet metal shims to guarantee strength and durability over time.

It consists of:
– a steam heating boiler with a stirring system that allows the mashing stages
-a separate tank where only the filtration of the threshers with sparging takes place

– a steam heating boiler where it is boiling and whirlpool

– a boiler-sparging tank
– a plate heat exchanger for cooling the must
– a support base unit system and central interlocking platform
– an electrical control panel
– a group of pumps
– a system of pipes, valves and DIN food fittings for moving the product.

Fully prepared for operation, prior to connection to the power line and the water supply.

After positioning the machine, it is necessary to connect the boiler to produce hot water.

Mashing tank

STEAM HEATING: The boiler is steam heated through a TRAPCOLD jacket on the bottom and on the cylinder, to guarantee a homogeneity of the temperature inside the tank.
Inside the boiler there are no grids and therefore the mash is free: in this way there are no stagnation zones (for example under grids) but the mash is uniformly mixed with an optimal heat exchange for a high extraction and a saccharification fast.
The specially designed stirrer ensures perfect stirring of the useful must during the ramps and the unloading phase of the tank.

Filtration tank

Filtration tank with conical bottom is made separate from the boiler to be low and wide as needed to have a large filtering surface and a height of the reduced bed of thresher, equipped with a rectangular door with removable slide, to facilitate the expulsion of exhausted thresh .
Supplied with trimmer, accessory that improves the performance and simplifies the filtration and discharge phases of the threshers.
A full-body grating with a thick thick waterjet, with a trapezoidal cut, guarantees maximum yield, strength and cleanliness.
Optional: double filtration level rods that serve to provide a clear indication of the internal situation of the filter, allowing the brewer to manage the phase with maximum yield and maximum possible speed.

Boiling/Whirlpool tank

STEAM HEATING: The boiler is steam heated through a TRAPCOLD jacket on the bottom and on the cylinder, to guarantee a homogeneity of the temperature inside the tank and the maximum in terms of heat exchange.
The whirlpool is made without moving the must, recirculating the must after boiling with the pump via a tangential entrance

Exchanger

Plate exchanger in AISI 304, with high coefficient of exchange, simplicity and safety in sanitization and possibility to maintain the exchanger through suitable regeneration of the plate pack.

Structure

Support structure in mono-tubular / bi-tubular AISI 304 steel, made with care and attention and equipped with adjustable feet.
Staircase made of stainless steel for access to the interlocking platform positioned next to the tanks, to facilitate access to the tanks.
All the components of the cooking room are positioned on the structure to facilitate installation of the system.

Electrical panel

The brewhouse is equipped with a software developed by Enobeer, which guarantees a prefect control of the inertia and the maximum in terms of performance and reduction of the consumption of the system.
Integrated remote assistance control.
It allows you to automate the mashing and boiling cycle to the benefit of repeatability and quality of your beer.
The plant can be supplied in semi-automatic or automatic version according to the needs of the brewery.

Must pump

Must transfer pumps managed by inverter with a 316 impeller, which responds to specific needs, hot liquids, sugars, with solid parts and detergents.
Optional: we provide CSF pump with removable open impeller in AISI 316 steel to carry out more quickly the washing phases.

Pipes

The fixed pipes of the cooking room have been specially designed to guarantee perfect sanitizing of the system, guaranteeing the recirculation of the sanitizing product and rinsing it in all parts of the machine in a very short time.
